Braised Vishnu,
the OTHER, OTHER white meat

75 pounds of onion, diced
40 pounds of butter
35 pounds of carrots, peeled
and diced
35 pounds of celery, diced
10 lbs bacon, diced
(because everything is better
with bacon)

200 gallons of elephant stock
200 pounds of potatoes, peeled
and cut in quarters
75 gallons of a good red wine, say pinot noir
Marshmallows

In a really large pot, saute
onions, celery and carrots in
butter until onions start to
soften, add the bacon and
cook until bacon has rendered
some of its fat. Add vishnu,
turning until he is coated on
all sides and then brown.
When Vishnu has browned on
all sides ( Excluding toenails,
but watching the ears care-
fully as they tend to scorch)
remove from the pot, deglaze
the pot with wine, then
return Vishnu and add the
elephant stock. Garnish with
Marshmallows.
